It might be a stretch to say this looks like cookie monster, but it does taste like a blueberry muffin! Ok, there is no strudel sprinkled on top and there aren’t a ton of calories and fat like a muffin, but it is sweet and yummy. I got a giggle from my 4 year old when I told him it was Cookie Monster and he tasted it and said he liked it (and then demanded another bowl of Star Wars cereal.) My 19 month old gobbled down thirds of it though – total mom victory as she has never eaten oatmeal for me, ever (not even baby oatmeal). For those on the 21 day fix program – this hits the spot for a sweet breakfast!
Blueberry Muffin Oatmeal (makes 2 servings)
- 1/2 cup oatmeal (I used old fashioned rolled oats)
- 1 cup water (or milk of choice)
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/2 tsp butter extract (optional)
- 1 cup blueberries (defrosted from frozen or fresh)
- 1 additional cup blueberries for topping (optional)
Cook oatmeal according to directions. After cooked, add in cinnamon, vanilla & butter extract, and 1 cup of blueberries. Use an immersion blender (one of my fav kitchen utensils ever! If you don’t have one get one!) to blend in the blueberries and give it that nice color. Top with additional 1/2 of blueberries for each serving, if preferred. Strawberry slices and blueberries for Cookie Monster’s eyes for fun.
21 day fix folks: if you use the additional 1/2 cup of blueberries on top per serving, 1 purple and 1 yellow per serving.
