Fiesta shrimp and peppers

I’m having a hard time coming up with new adjectives to describe this meal. The shrimp are really perfection, so flavorful.  This is now my top shrimp recipe.  It’s hard to be #1 but someone’s gotta be, and that someone is Fiesta shrimp.  Just make it already!

Fiesta shrimp and peppers (serves 2-3)
1 bag frozen shrimp (run under cold water for 5-10 minutes to defrost prior to cooking)
2 tsp coconut oil
1/2 tsp chili powder
1/2 tsp paprika
3 cloves minced garlic
1/2 tsp onion powder
1 tsp oregano
3/4 tsp sea salt
2-3 bell peppers, sliced into strips
2 T fresh cilantro, for serving

In a large skillet, heat oil over medium heat.  Mix shrimp and seasonings to coat, add to skillet. Once shrimp are almost fully cooked (pink is almost gone), add bell peppers and saute until peppers are cooked to your liking.  Serve with brown rice or place in tortilla for a fajita!

21 day fixers – measure out shrimp in red container for 1 red and peppers in green container for 1 green, plus 1 teaspoon.
