Pina colada microwave oatmeal

If you like pina colada, and getting caught in the rain; if you’re not into cooking breakfast, and you have half a brain.  If you like making oatmeal at 7am, in the depths of a microwave; then I’ll meet you in the kitchen, and you can have the leftovers that I save!

I’m waxing poetic over here ya’ll.  Anyways this is super easy oatmeal.  I didn’t feel like getting a pot out today and waiting 5 minutes to cook oatmeal. 2 minutes is so much better.

Pina colada microwave oats

1 banana

1/4 c old fashioned oats

1/4 c water

1/8 c unsweetened almond or coconut milk

1/4 TSP coconut extract

1 Tbsp unsweetened coconut flakes

10 pecan halves, broken

Slice banana in bottom of microwave safe dish, add oatmeal, liquids and extract.  Microwave 2 minutes.  Remove and carefully mash banana and add coconut and pecans (optional).  I found this plenty sweet with the banana but you could add a teaspoon of maple syrup to sweeten further.

21 day fix: 1 yellow, 1 purple, 1 blue, 1/2 orange.  If you add maple syrup add 1 TSP.
