Mixed martial arts and health advice!

Two things I’ve been up to since my last post here! I had great plans to keep my mileage up by running 2 days a week, one short and one long run, but that has completely dropped off the radar. I started a new workout program a week after the Ragnar Relay, and it has completely kicked my butt, as all Beachbody workouts manage to do! I am 25 days into the 30 day workout and can’t wait to share my results. I should be wrapping up the day before Thanksgiving (Is that good timing or what??) and I will be sharing my results at that time.

The workout program is called Core de Force, and it absolutely has worked my core. Every. single. day.  Much to my chagrin. Who in the world likes working their core??? It hurts!! I really hate it, but then I love it. It’s mixed martial arts, which means a variety of punching, a variety of kicks and then there are agility related cardio “spikes” or intervals thrown in between the martial arts aspect. It’s completely different than any workout I have done before – there are no weights, but lots of push-up variations to improve muscle strength.

How to be an inconsistent blogger

Have two little kids at home with you at all time, train for a half marathon and then onto a full marathon, coach people and run challenge groups every month to stay healthy, host Thanksgiving, have a 5 year old birthday party, do Christmas shopping for 3 families and plan a Disney vacation. Ok, I know, excuses.  But seriously I’ve been busy, ya’ll!  How these amazing moms with 4+ kids manage to blog and with PICTURES, is beyond my comprehension and ability. The pictures take me the longest. I might be technology challenged, just a bit.

It’s been an awesome last month though! I PR’d in my half marathon December 10th, running a 1:38, which breaks down to a 7:32 minute mile. Which I thought was pretty fast!  But definitely not fast enough, I didn’t even place in my age group. Such fast women runners out there!! Kind of amazing and cool. I was happy with my time, and I could barely walk for 2 days, but I’m all recovered now and back to some strength workouts before upping my mileage again for the Myrtle Beach marathon in March!  My first full marathon.

Thanksgiving was great, we had 6 family members stay over at our house for a few nights and it was a fun time of laughter, drinking and eating. Might have been in excess. I call it carb loading these days for my long runs. hehe.

My 4 year old turned 5! We celebrated with an indoor pool party at our gym, with an Octonauts theme. I’ve made the mistake before of having too much food at a kid’s party, and I made it again. Seriously, how much do I think 5 year olds can and will eat in an hour? Not much, Jodi, not much. Please, stop looking at Pinterest ideas and just serve pizza and cupcakes. You don’t need 5 different cute themed sides that take your time up to make and display them. Please remember this next time. Although I was super happy with how my pinterest cupcakes turned out. Will post a picture when I can find where I put it. Again, technology challenged!

Also, we decided to take our now 5 year old and 2 year old to Disney & Legoland next spring. So I’ve been diving into Google Disney research. After much weighing of pro’s and con’s, we decided NOT to stay on Disney property (gasp!) because it was so much cheaper to stay a little bit further away in a beautifully decorated 3 bedroom condo in a resort with 4 pools. Hello, post bedtime drinks for mommy & daddy on the screened in porch while children slumber peacefully in their separate bedrooms. I just can’t shell out $400/night for a suite on Disney property, as cool as it would be. The one bedroom in the condo is a Star Wars theme and my 5 year old is going to be in heaven, so I don’t feel guilty about not staying in a themed Disney resort. Anyways, the place is booked and now we can relax for a few months!

I really would like to blog more consistently but TIME. I will try to get back here once a week. Once a month is really quite terrible, I didn’t realize it had been so long! Until next time!

Turkey sausage & goat cheese stuffed shrooms (21 day fix approved!)

PicsArt_10-26-10.52.25.jpgWhen you go to the grocery store and everything you want to buy is on sale…when does that happen?? Oh, today. I should clarify not really on sale, just about to go past the sell by date, so it was labelled as a “manager special.” I need to give the manager a big squeeze.

Portobello mushrooms caps, .25 cents each! Turkey sausage, $2 off! Oh, the glory of a good deal and slightly past it’s prime sausage.

I garnered this recipe from Emeril at the Food Network, and then tailored it a bit based on what I had in the fridge and what I did and did not want in it (no bread crumbs or Parmesan; a big fat YES to goat cheese).  I also put way too much seasoning in mine, out of lack of attention to detail to reading the recipe.  Lack of attention caused by two children jumping on the couch, tackling each other and fighting over one lego when there are 400 others.  It was still good, just a little bit extra spicy.

Ingredients
4 portobello caps
1 package uncooked turkey sausage links (5 links), casings removed
1/2 c finely chopped onion
1 finely chopped green bell pepper
2 minced garlic cloves
2 tsp parsley
1 egg
1 teaspoon of Creole seasoning (recipe below)
goat cheese to taste
balsamic vinegar and evoo to taste

Creole seasoning
2 1/2 Tbsp paprika
2 Tbsp salt
2 Tbsp garlic powder
1 Tbsp black pepper
1 Tbsp onion powder
1 Tbsp cayenne pepper
1 Tbsp oregano
1 Tbsp thyme
combine all ingredients; yield 2/3 c.

Instructions
Cut off portobello stems and chop up, set aside. Brush olive oil on both sides of shrooms & preheat oven to 400. In a medium skillet, brown turkey sausage, breaking up with a spoon about 5 minutes.  Add in onion, pepper and stems and cook another 3 minutes until soft. Add garlic and cook until fragrant, 30 seconds. Remove from heat into mixing bowl and cool slightly, add in egg, parsley and creole seasoning and mix together.

Divide mixture among the mushroom caps and place on a baking sheet. Bake approximately 15 minutes until mushrooms are soft. Place on top of arugula, drizzle with balsamic and evoo, and top with goat cheese.  Wala!

I’ve FALLen head over heels for Greek yogurt lately. So many delicious combinations and ways to enjoy it.  I’m getting protein – and it’s 21 day fix approved so fits in my nutrition plan!  Yaaaaaas.  Here are two ways(sweet and savory) I enjoyed today, try it!

Sweet potato pancake recipe can be found here.  And for the Proyo – just add in some protein powder (vanilla whey, etc or even better, Shakeology – probiotics!) to plain nonfat greek yogurt.  I added some unsweetened coconut flakes on top too.  I felt like I was eating cake with pudding in the middle!

A little spice for my lunch –  Chobani Meze Dip in three pepper salsa.  LOOOVE that it has less fat than hummus and that I recognize all the ingredients on the label!  It’s pretty hard to find a healthy dip that you can actually have more than 2 Tbsp of.  This fits the bill!  I added it onto my lettuce wraps along with low sodium turkey, cheese, tomato and red onion.

I started doing the 21 day fix (Beachbody workout program) in January of this year (2016).  I lost 10 lbs in two rounds of 21 day fix (42 days).  Then I did 21 day fix extreme in March and started drinking Shakeology, losing another 7 lbs in that 21 days.  Then I did Brazil Butt Lift Carnivale workouts, continuing to drink Shakeology and lost a few more lbs.  Overall, I dropped from a size 10 to a size 6 from losing approximately 20 lbs.

Unfortunately, I had some side effects from this weight loss.  My clothing no longer fit.  I had to go out and buy size 6 clothes, as my 10’s and even 8’s were too large.  I felt pretty good at my weight of 130 (I’m 5’6″) at a size 6 and I didn’t feel like I needed to lose more weight so felt like it was a good time to get new clothes.  Even my stretchy tie at the waist pants were falling off.

So I bought a number of pairs of shorts, jeans and shirts.  I continued working out daily, doing a mix of 21 day fix, Brazil Butt Lift Carnivale and 21 day fix extreme while drinking Shakeology – but I modified my eating plan for 21 day fix to maintain weight vs losing weight, per the 21 day fix nutrition plan.

My weight stayed the same, but I dropped another size.  To a 4!!  (I had to buy a size 2 and XS in Old Navy, but pretty sure their sizes run on the big side). Now, my size 6 attire is too big.  Now, this is what upsets me!  Nowhere in Beachbody’s advertising did they advertise that this could happen.  Had I known that I could drop a clothing size without actually losing weight, I would have waited to buy all size 4’s.  As it is now, I have more clothes that I have to donate and more clothes to buy.  It’s quite ridiculous and I know several people that this same thing has happened to!  I’m pretty sure there are more out there, which is why I’m proposing a class action lawsuit against Beachbody for failing to properly disclose these effects of undertaking their exercise programs.  I consider it borderline manipulative business practices to fail to disclose this information.  It’s really unacceptable that I’ve been deceived in this way and had to suffer from these hardships. I’m also recommending they compensate me for all of my wardrobe changes that have been required as a result of doing their exercise programs.  I have several other plaintiffs joining me and I’m looking for more people to include in this legal action. 6 Day Clean Eating Reset

It can be hard to know the exact nutritional variety of the perfect meal plan to lose weight and reset your metabolism.  So, I have it for you!  I have access to a full meal plan with grocery list, accessible by website and on your smart phone, for you to eat clean, healthy and lose 3-10 lbs in 6 days!  It includes 7 servings of Shakeology ($35, the only thing you will pay for).

So what is Shakeology?  I am a skeptical person in general.  I don’t buy into many things. And Shakeology was one of the things I HAD to try to believe how good it was.  Shakeology is the equivalent of 7 salads, it has one of the best probiotics available along with digestive enzymes.  IBS like symptoms?  Shakeology has it taken care of.  Shakeology also has a certified low glycemic index – I have friends able to go off of their diabetic medications from drinking it!  And there are many superfoods in Shakeology that you just don’t eat every day.  Ok, I do eat spinach most days (in Shakeology), and I eat blueberries a lot of days (also in Shakeology).  But I don’t eat acerola cherry, camu-camu, lycium berry, rose hips, pomegranate, schisandra, bilberry and luo han guo every day (all in Shakeology).

What kinds of foods do you eat on the reset?  Well, I’m on day 5 today and on the menu for breakfast: turkey sausage and waffle!  Yum!  I had steak for dinner the other night too.  All the meals are simple, easy to make and tasty.  I’ve picked up several new recipes from it!

What is clean eating?

Clean eating is eating healthy, whole, unprocessed foods such as whole grains, vegetables, fruits, healthy proteins and fats; while avoiding unhealthy options such as sugar, salt, refined grains, artificial colors, preservatives and unhealthy fats.  Portion control is key and eating on a frequent basis (3 meals and 2-3 snacks spread throughout the day) is important to fuel your body.  Organic options preferred.

Examples of clean foods (and foods you can eat on the 21 day fix):

oatmeal, eggs, plain yogurt, ricotta cheese, cottage cheese, lean meats, whole grain breads, extra virgin coconut and olive oils, avocado, cheese, beans, lentils, quinoa, whole grain pasta, potatoes (and all other veggies), bananas (and pretty much all other fruits), raw nuts and seeds, salad dressings without added sugar, salt, unhealthy fats (there are some out there).

When I first started eating clean a few months ago…some things I had to purge from my diet:  cereal (wah!  I love cereal!  There are some clean cereals but Frosted Mini-wheats ain’t one of them), deli meats, general baked goods, ranch dressing (I need to start making my own), pretzels, canned soups, packaged pancake/waffle mixes and BUTTER.  I probably miss butter the most, we were good pals.  She is sitting very forlorn in my fridge wondering what she did wrong.  Sorry babe, you’ve been replaced with Coconut Oil.

Before I started eating clean I was resistant because I didn’t want to have to do more cooking than I already did and that’s what it seemed like…but it’s really not more, it’s just different than what you did before.
